5-Hydroxymethyl-2-furaldehyde is used as an intermediate of OMBF (5,5'-oxydimethylenebis(2- furfural)), crown ethers. It is used in organic synthesis to prepare dialdehydes, glycols, ethers, amino alcohols and acetals. It acts as an antioxidant found in some fruit juices and caramel products.

5-Hydroxymethyl-2-Furaldehyd wird als Zwischenprodukt von OMBF (5,5′-Oxydimethylenbis(2-furfural)), Kronenether verwendet. Wird in der organischen Synthese zur Herstellung von Dialdehyden, Glykolen, Ether, Aminoalkoholen und Acetalen verwendet. Wirkt wie ein Antioxidans, das in einigen Fruchtsäften und Karamellprodukten zu finden ist.
Löslichkeit
Löslich in Wasser, Alkohol, Ethylacetat, Aceton, Dimethylformamid, Benzol, Äther und Chloroform.
Hinweise
Luft- und lichtempfindlich. Den Behälter dicht verschlossen halten. Nicht kompatibel mit starken Basen, starken Oxidationsmitteln und starken Reduktionsmitteln.
