trans-Cinnamaldehyde is used in the flavor and perfume industry. It is also used in medicine. It reacts with glutathione to get an adduct 1'-(glutathion-S-yl)-dihydrocinnamaldehyde. It is used to prepare cinnamylidene-bisacetamide by reacting with acetamide. Further, it inhibits xanthine oxidase.

Anwendungen
Trans-Cinnamaldehyd wird in der Aroma- und Parfümindustrie verwendet. Wird auch in der Medizin verwendet. Reagiert mit Glutathion zu einem 1′-(Glutathion-S-yl)-Dihydrocinnamaldehyd-Addukt. Wird zur Herstellung von Cinnamylidene-Bisacetamid durch Reaktion mit Acetamid verwendet. Hemmt darüber hinaus Xanthinoxidase.

Mit Wasser mischbar.
